This curry with chicken is easy to prepare and tastes just like the curries you eat in a Thai restaurant. An extra bonus: you prepare everything in 1 pan so you have little washing up.
Ingredients
2 cans (400 ml) coconut milk
2 tbsp green curry paste
160 ml chicken broth
1 can (220 gr) water chestnuts, drained and cut into thin slices
1 can (225 gr) bamboo shoots, drained and cut into thin slices
1 green pepper, cut into 2 cm pieces
75 gr fresh mushrooms, cut into slices
3 chicken fillets, cut into cubes
3 tbsp fish sauce
4 tablespoons chopped fresh basil
Preparation
Put the coconut milk and curry paste in a large saucepan over medium heat. Let it simmer for 5 minutes.
Stir in the chicken broth, water chestnuts, bamboo shoots, peppers, mushrooms and chicken. Season with some fish sauce and basil. Cook for 10 minutes until the chicken is tender but still soft.
