Candied oranges in bitter chocolate
Ingredients:
Red orange 2 pieces
Sugar ¾ cup
Water 2 cups
Corn syrup 2 tablespoons
Bitter chocolate 130 g
Sea salt
Preparation:
Oranges cut into slices and remove pits. Mix sugar, water and corn syrup in a wide and deep saucepan and bring to a boil, stirring constantly until the sugar completely dissolves.
Add the slices of orange in the pan so that there is only one layer of fruit on the surface of the water, bring to a boil, and then reduce the heat.
Cook the oranges over low heat for an hour until they become almost transparent, and the liquid in which they are cooked is saturated pink.
Put a sheet of parchment for baking under a grate for the baking, pull out the circles of oranges from the pan with tongs and put them on the grill, letting excess syrup drain.
Allow the wedges to dry thoroughly for about 24 hours. Put parchment for baking on a large plate. Melt the chocolate in a water bath.
