This Moroccan chicken recipe is prepared in the slow cooker. A delicious combination of sweetness and spices.
Ingredients
2 tablespoons of olive oil
8 chicken fillets, in pieces of 2.5 cm
1 eggplant, in 2.5 cm pieces
2 large onions, thinly sliced
4 large roots, thin slices
60 gr raisins or dried cranberries
65 gr chopped dried apricots
500 ml chicken broth
2 tablespoons of tomato paste
2 tablespoons of lemon juice
2 tablespoons of flour
2 teaspoons of pressed garlic
1 1/2 teaspoon ground cumin
1 1/2 teaspoon ground ginger
1 teaspoon of cinnamon
3/4 teaspoon of ground black pepper
salt to taste
250 ml of water
175 gr couscous
Preparation
Heat the olive oil in a frying pan over medium heat. Place the chicken pieces and eggplant in the hot oil; stir fry until the chicken is brown on all sides, but not yet cooked. Remove the pan from the heat.
Put the chicken and eggplant in the slow cooker. Place the onions, carrots, cranberries and apricots over them.
Mix the chicken broth, tomato paste, lemon juice, flour, garlic, cumin, ginger, cinnamon and black pepper in a bowl. Pour this mixture over the chicken and vegetables in the slow cooker.
Cook for 5 hours at the highest setting, or 8 hours at the lowest setting.
Bring the water to a boil in a saucepan. Stir in the couscous and remove the pan from the heat. Cover and leave for 5 minutes, until all the water has been absorbed. Stir with a fork.
