Ingredients:
6 cups of sliced strawberries
4 large eggs
2 tbsp of sugar OR honey
1 cup of unsweetened almond milk
1 tsp of vanilla extract
2 tbsp of light olive oil
1 tbsp of light brown sugar
¾ cup of gluten-free flour baking mix
1/8 tsp of salt
Procedure:
In a mixing bowl, combine the strawberries and sugar or honey. Let stand for 30 minutes at room temperature.
In a medium-sized bowl, add in the eggs, unsweetened almond milk, light olive oil, vanilla extract, light brown sugar, and salt. Whisk the ingredients together until well-incorporated. Then, add in the gluten-free flour baking mix. Continue whisking until the ingredients are properly combined.
Prepare an 8” nonstick skillet or crepe pan and set it over medium heat. Take ¼ cup of batter and add it into the pan. Swirl to coat the pan. Cook for 45 seconds or until the crepe is just beginning to brown. Flip and cook the other side for 10 seconds then transfer in onto a serving plate.
