Serves: 12 -14 pancakes
Ingredients:
2 over-ripe bananas
1 cup of fat-free plain Greek yogurt
½ cup of fat-free milk
2 egg whites
1 tsp of pure vanilla extract
1 cup of all-purpose flour
½ tsp of cinnamon
2 tsps. of baking powder
Instructions:
Preheat a nonstick electric skillet to 325 °F degrees.
Put the banana in a medium sized bowl. Mash with a fork until almost smooth. Add the milk, Greek yogurt, egg whites, and vanilla extract. Whisk until it mixes well.
In a larger bowl, combine flour, baking powder and cinnamon and whisk.
Add wet ingredients to dry and stir just until combined.
Pour batter into skillet, using ¼ cup batter for each pancake*. Cook until bubbles form on top, then other sides turn to brown.
Serve hot.
*To make blueberry pancakes, drop fresh blueberries into pancake batter once they are on the griddle.
