Ingredients:
For Lamb Cutlets:
2 garlic cloves, minced
2 tablespoons olive oil
2 teaspoons dried oregano, crushed
2 teaspoons sweet paprika
Salt and freshly ground black pepper, to taste
12 lamb cutlets, trimmed
For Zucchini:
3 tablespoons olive oil
6 large zucchinis, spiralized with Blade C
Salt and freshly ground black pepper, to taste
Directions:
Preheat the grill to high heat.
Grease the grill grate.
For lamb in a bowl mix together all ingredients except lamb cutlets.
Add cutlets and coat with garlic mixture evenly.
Keep aside for at least 10 minutes.
Grill the cutlets for about 2-3 minutes per side or till desired doneness.
Meanwhile in a large skillet, heat oil on medium heat.
Add zucchini, salt and black pepper and cook for about 3-4 minutes.
Divide the zucchini noodles in serving plates and top with lamb cutlets.
Serve immediately.
