Ingredients:
½ of a large onion
7 ½ oz. cauliflower rice
1 garlic clove
2 tbsp. olive oil
3 oz. asparagus
4 oz. mushrooms
1 tbsp. lemon juice
3 tbsp. white wine
½ lemon zest
2 tbsp. parsley—finely chopped
Preparation Method:
Prep the veggies by mincing the garlic and dicing the onions. Trim the asparagus into ½-inch pieces and slice the mushrooms.
Sauté the garlic and onions in a hot skillet with the oil for 3-5 minutes. Toss in the mushrooms and continue cooking slowly for another minute.
Blend in the asparagus and cook for 2-3 minutes. Pour in the wine, lemon juice, and cauliflower rice.
Cook until tender (5-10 minutes).
Season to your liking and serve.
