Preheat oven at a temperature of 400°F.
In a small microwave safe dish, melt the 2 tablespoon coconut oil.
Before cutting it into cubes, scrub and peel the sweet potato first. When done, add in the sweet potato into an average sized mixing bowl and add in a tablespoon of melted coconut oil and salt, to taste.
Put the sweet potato on a foil covered baking sheet and let it bake atop the center rack for about 30 minutes, while flipping the potatoes occasionally every 10 minutes.
Get your Brussels sprouts and kale ready, and put in the mixture into the bowl to coat in with the remainder of the coconut oil.
Add seasoning to it with the salt and pepper for taste and put on a different foil covered baking sheet.
Let it bake for 10 minutes while flipping it halfway through, once the potatoes are done.
Wash the quinoa until the water runs clear, in a mesh strainer.
Using a thin layer of a non-stick cooking spray, coat the bottom of an average size saucepan, and turn on the heat high. Add the washed quinoa and let it toast until the quinoa seems dry. There should be no water that will be visible.
Remain the burner on high, and add the 2 cups vegetable broth.
