12 pitted dates
3/4 cup vegan chocolate chips
1 sheet vegan puff pastry, thawed
Stuff a walnut half into each of the dates and set aside. Melt the chocolate in a heatproof bowl in the microwave or on the stovetop in a double boiler. Place the stuffed dates into the melted chocolate, turning to coat. Remove each coated date from the chocolate and arrange on a plate or baking sheet lined with parchment paper or waxed paper. Refrigerate for several hours to firm up. You can serve these now for a quick version (minus the pastry). Or proceed with the next step.
Cut the puff pastry into 12 (3-inch) squares. Place a chilled date on top of each piece of pastry and bring up the sides. Pinch the seams to seal and then roll in your hands to form a smooth ball. Arrange the pastry-wrapped dates on a baking sheet and refrigerate for an hour or longer to chill.
When ready to bake, preheat the oven to 400°F. Bake until nicely browned all over, 15 to 20 minutes. Cool for 10 minutes before serving.
