Ingredients:
½ cup vegan yogurt
3 Serrano peppers
4 garlic cloves
1 head cauliflower
1 cup frozen peas
16 oz. tomato sauce
¼ cup cilantro
3 tsp. garam masala
4 tsp. cumin
2 tsp. fresh lemon juice
4 tsp. coriander
1 tsp. paprika
2 cups vegan cream
2 tbsp. vegan butter
Refer to the earlier recipes for the vegan yogurt, vegan cream, and vegan butter.
Begin by preheating the oven to 375 degrees.
Drain and slice the tofu into half inch-sized cubes. Create a mixture of the vegan yogurt, the paprika, the lemon juice, two teaspoons of the cumin, and 1 teaspoon of the garam masala. Add the tofu cubes to the mixture and stir. Remove the tofu cubes and arrange on a greased baking sheet. Insert the sheet into the oven and bake for 45 minutes, rotating the tofu slices every 15 minutes.
While the tofu is baking, mince the garlic cloves and Serrano peppers. Cut the cauliflower into florets. Cook the garlic and peppers together over medium heat with the vegan butter in a skillet until softened. Then add in the rest of the cumin, garam masala, and the coriander. After a minute, add the tomato sauce and cauliflower. Cover the skillet and let it cook for 15 minutes. Stir frequently.
Once this is done, stir in the baked tofu cubes from earlier. Also add the vegan cream and frozen peas. Simmer for about five minutes.
