Ingredients:

1 yellow onion, chopped
3 tablespoons olive oil
1 carrot, chopped
2 cups mushrooms, sliced
Zest from ½ lemon, grated
2 tablespoons lemon juice
A pinch of salt and black pepper
4 garlic cloves, minced
1 cup quinoa
10 cherry tomatoes, halved
1 cup veggie stock
1 tablespoon spring onions, chopped

 

Directions:

Set your instant pot on sauté mode, add oil, heat it up, add onion and carrot, stir and sauté for 2 minutes.

Add mushrooms, stir and cook for 3 minutes more.
Add salt, pepper, garlic, lemon juice and lemon zest, quinoa and stock, stir and cook for 1 minute.
Add tomatoes, cover pot, cook on High for 10 minutes, divide into bowls, sprinkle spring onion on top and serve cold for breakfast.
