Ingredients (2 Servings)

 

One 14-ounce package firm tofu, drained and cut into 1/2-inch cubes
1/2 teaspoon ground turmeric
Kosher salt and freshly ground black pepper
1/8 teaspoon ground cayenne pepper, optional
2 tablespoons extra-virgin olive oil
3 scallions, thinly sliced, green and white parts separated
5 ounces fresh spinach, chopped
1 to 2 teaspoons fresh lemon juice
1 cup grape tomatoes, halved
1/2 cup fresh basil, roughly chopped

 

 

Directions

 

Mix tofu, turmeric, black pepper, salt and cayenne in a medium sized bowl.
Take a large skillet, heat on medium-high and put oil in. Add scallions and heat until it softens.
Add the tofu mixture, cook with occasional stirring until it becomes brown in color.
Add the spinach, lemon juice and salt, then combine it properly by stirring. Add tomato and scallion greens and mix properly until tomatoes are cooked well and softened.
Bring out from heat, add basil and stir. Add salt and pepper. Serve hot.
