Ingredients
1 x 250 ml cup soy milk
1 teaspoon apple cider vinegar
1/4 cup granulated sugar
2 teaspoons cinnamon
1/3 cup canola oil
1 teaspoon vanilla extract
1 250 ml cup all-purpose flour
1 tsp baking soda and 1 tsp baking powder
100 g cocoa powder, Dutch-processed or pure
A Pinch of salt
Preheat the oven to 180 . Mix the dry ingredients together. In a separate bowl, mix the soy milk, sugar and vinegar and add to the dry ingredients. Add the oil and the vanilla and whisk. Divide between the cupcake holders and bake for 15 to 20 minutes. The tops will spring back when they are done. Do check after 15 minutes.
