Ground almonds 40 g
Unsalted butter 40 g
Salted Butter 40 g
Grated Parmesan 80 g

Preparation:
In a large bowl, mix the flour, ground almonds and butter until a coarse mixture is obtained.
Add parmesan and herbs and stir with your fingertips, so that the oil does not melt.
Add a tablespoon of cold water and form a ball of dough.
Cover the food film and put it in the refrigerator for an hour.
Preheat the oven to 180 degrees.
Sprinkle the working surface with flour and roll the dough into a 3-4 mm thick layer.
With the help of molds or a narrow glass make cookies.
Cover the baking sheet with parchment for baking and lay cookies on it.
Sprinkle the pastry on top with cheese.
Send the baking tray to the oven and bake the biscuits 12 minutes until golden brown.
Before serving, cool down.
