Ingredients:
1 and ½ cups quinoa
1 cinnamon stick
1 and ½ cups water
¼ cup raisins
1 tablespoon stevia
1 apple, cored, peeled and grated
1 cup natural apple juice
1 cup coconut yogurt
¼ cup pistachios, chopped
¼ cup blueberries
Directions:
In your instant pot, mix quinoa with cinnamon and water, stir, cover and cook on High for 3 minutes.
Strain, transfer quinoa to a bowl, add stevia, apple, apple juice, yogurt, pistachios and blueberries, toss well and serve cold for breakfast.
