Ingredients:
½ tablespoon olive oil
1 onion, chopped
1 garlic clove, minced
1 pound ground lamb
1 teaspoon ground cumin
1 tablespoon fresh rosemary, chopped
Salt and freshly ground black pepper, to taste
1 celeriac, peeled and spiralized with Blade C
½ cup celery rib, chopped
1 cup tomatoes, chopped finely
1 tablespoon tomato paste
¼ teaspoon red pepper flakes, crushed
½ cup low sodium chicken broth
Directions:
In a large skillet, heat oil on medium heat.
Add onion and garlic and sauté for about 2-3 minutes.
Add lamb and cook for about 8-10 minutes or till browned.
Add cumin, rosemary, salt and pepper and cook for about 1 minute.
Add Celeriac, celery rib, tomato, tomato paste and red pepper flakes and cook for about 2-3 minutes until vegetable are tender.
Add broth and bring to a boil on high heat.
Reduced heat to medium and cook, covered for about 10-15 minutes or till desired doneness.
