Vegetable and Hummus Sandwich

Ingredients:
2 bread slices
1 yellow onion (sliced)
1 Roma tomato (sliced)
Handful of Romaine lettuce leaves
1 tsp. olive oil
1 tbsp. hummus
Salt and pepper to taste
1 tsp. lemon juice
Directions:
1. Lightly toast each of the bread slices in a toaster.
2. Spread the hummus onto each slice.
3. Sauté the sliced onion in a teaspoon of olive oil, until caramelized or lightly discolored. Add lemon juice into the onions and mix well.
4. Take one slice of bread and arrange the sliced tomatoes and lettuce leaves on top.
5. Pour caramelized onion on top and sprinkle with salt and pepper to taste.
