The recipe makes 6 servings.
The Ingredients:
• 1 1-pound box linguine (cooked and drained)
• 1 6.75-ounce jar of Spanish olives (drained and chopped)
• 1 3.5-ounce jar of capers (drained and chopped)
• 1 26-ounce jar or marinara sauce
• a tablespoon of olive oil
• 2 cloves of sliced garlic
• 1/4 teaspoon of red pepper flakes (crushed)
• half a cup of fresh flat-leaf parsley (chopped)
• half a teaspoon of lemon zest
In a heated saucepan with oil over medium flame, cook the red pepper flakes and garlic for 2 minutes. Pour the marinara sauce and then add the lemon zest, capers, olives and parsley. Turn the flame to low and allow to simmer for 15 minutes.
Add the marinara sauce, olives, capers, parsley, and lemon zest. Reduce heat to low and simmer for about 15 minutes. Add the cooked linguine to the sauce, toss to coat and serve.
