Ingredients:

2 tablespoons ground flax feeds

6 tablespoons water

½ tablespoon olive oil

2 medium sweet potatoes, peeled and spiralized with Blade C

¼ teaspoon red pepper flakes, crushed

Salt and freshly ground black pepper, to taste

3 tablespoons honey

Directions:

In a bowl, mix together flax seeds and water and keep aside.

In a large nonstick skillet, heat oil on medium heat.

Add sweet potato, salt and black pepper and cook for about 8-10 minutes, stirring occasionally.

Transfer the sweet potatoes into a large bowl and keep aside to cool slightly.

Stir in flax seed mixture.

Meanwhile preheat a greased griddle.

Place the desired amount of the sweet potato mixture in the griddle and cook for about 2-3 minutes.

Carefully flip the side and cook for about 1-2 minutes.

Repeat with the remaining mixture.

Serve the pancakes with the topping of honey.
