Ingredients
1 tbsp. Olive Oil
3 tbsps. of Sweet Corn (canned)
¼ cup of Kidney Beans (canned)
1 medium White Onion (diced)
½ Green Bell Pepper (diced)
½ cup Water
½ Avocado (sliced)
1 Garlic Clove (minced)
1 tbsp. of Tomato Paste
¼ tsp. Cayenne Pepper
½ tsp. Salt
½ tsp. Cumin
1 tsp. Thyme
1 tsp. Paprika
1 sheet of Puff Pastry
Method
Pre heat oven to 400F and line the cookie sheet with baking paper.
Add olive oil to skillet placed on medium heat. Add bell pepper, garlic and onion & sauté until onions are soft.
Add the corn and beans and stir well. Add water and tomato paste. Mix well and season with the spices and herbs.
Simmer over low heat for 5 minutes.
Cut puff pastry sheet into 2 inch squares and arrange them on the baking paper.
Top each square with a tsp. of the mixture and bake for 15 minutes. Remove from the oven and serve with a slice of avocado on top.
