Ingredients:
Pine Nuts, roasted -1/4 cup
Steel Cut Oats -1 cup
White Onion, sliced thinly-1/2
Vegetable Broth -2 cups
Kale leaves, fresh, chopped-4 cups
Shiitake Mushrooms, chopped-2 cups
Water-1/2 cup
Garlic cloves, minced-4
Coconut Oil -1 tablespoon
Method of Preparation:
Combine the prepared vegetable broth and water in a medium saucepan and heat over medium heat.
Bring the mixture to a boil and add the oats.
Reduce the heat to low and cook them for 25 to 30 minutes or until the oats are cooked and the water has been absorbed.
In the meantime, heat the coconut oil in a large skillet over medium heat.
Once the oil is hot, stir in the onion and garlic.
Sauté them for 3 to 4 minutes or until aromatic.
Add the mushrooms and cook for another 5 to 6 minutes or until browned lightly.
Stir in the kale and sauté for 2 to 3 minutes or until the kale is wilted.
Transfer the cooked oats to serving bowls and top them with the kale-mushroom mixture and pine nuts. You can even add a fried egg on the top, if desired.
