Ingredients
Tiny pinch of salt
1 tablespoon of nutritional yeast**
1 tablespoon of maple syrup- plus more for serving
¼ teaspoon of freshly ground nutmeg
2 tablespoons of millet flour (or spelt or whole wheat)
1 teaspoon of cinnamon
Coconut oil, for the pan
1 cup of almond breeze almond milk
6 slices of day-old ciabatta bread, sliced about ¾-inch thick*
Toppings:
Vegan butter
Powdered sugar
Fresh fruit
Maple syrup
Instructions
In a small bowl, combine the maple syrup, nutritional yeast, nutmeg, almond milk, flour, cinnamon, salt, and whisk.
Put the bread in a shallow dish that has sides and that has the ability to hold the whole bread.
Pour the almond milk mixture all over the bread and flip it or lift over to ensure all sides coat equally.
Add a sprinkle of coconut oil to a large skillet and heat over medium heat. Once the pan is hot, add in the slices of bread and cook for a few minutes on each side or until they turn golden brown.
Serve with fresh fruit, powdered sugar, maple syrup and a dab of vegan butter. Enjoy!
Notes
It is important that you get some good sturdy bread such as ciabatta from a Whole Foods bakery. Using wimpy sandwich bread will give you soggy French toast.
