This sweet yet savory and slightly spicy soup will invigorate your taste buds! Sweet, ripe tomatoes and red bell pepper combine with onions and a mixture of spices to offer a truly umami experience when creamy avocados and a touch of sea salt join the party.
Ingredients
2 c tomatoes, peeled, seeded and chopped
1 clove garlic
¼ c yellow onion, chopped
1 red bell pepper, seeded and chopped
1 Hass avocado, pitted
1 tsp cumin
1 tsp coriander
1-2 c vegetable broth, depending on consistency you desire
pinch sea salt
cilantro for garnish (opt)
Instructions
Bring a pot of salted water to a boil. When the water is boiling, add tomatoes and allow to boil for about 30 seconds. Remove tomatoes immediately to an ice bath. Allow to sit for about 1 minutes. As you remove each tomato from the ice bath the skins will slip from the meat of the tomato. Cut out the core and squeeze gently to remove most of the seeds. Discard seeds and cores.
Add all ingredients to your blender, withholding part of the vegetable broth.
Puree until smooth.
Pour pureed mixture into a saucepan and bring to a boil. Stirring constantly so it doesn’t scorch. Adjust consistency once it comes to a boil with the remaining vegetable broth.
Salt and pepper to taste. Serve.
