For the cake
1 cup soy milk
1 tsp apple cider vinegar
1 1⁄4 cups all-purpose flour
1 cup granulated sugar
2 Tbsp cocoa powder
1⁄2 tsp baking powder
1⁄2 tsp baking soda
1⁄2 tsp salt
1⁄3 cup canola oil
2 Tbsp red food coloring
2 tsp vanilla extract
1⁄4 tsp almond extract
1 tsp chocolate extract
For the frosting
1⁄4 cup margarine, at room temperature
1⁄4 cup vegan cream cheese, at room temperature
1 1/2 cups powdered sugar
1 tsp vanilla extract
Instructions
Make the cupcakes
Preheat oven to 350 degrees. Line your cupcake pan with paper cupcake liners or lightly grease the pan.
In a small bowl, mix together the soy milk and vinegar and set aside to curdle.
In a large bowl, combine the flour, cocoa powder, sugar, baking powder, baking soda and salt and mix until well-combined.
