Ingredients:
1 oz can artichoke hearts, drained, cut quartered
7-8 white button mushrooms, chopped
1 red pepper, chopped
1/3 cup chopped black olives
1 tbsp capers
3 tbsp lemon juice
2 tbsp olive oil
salt and pepper, to taste
Directions:
Place the artichokes and mushrooms in a large salad bowl and stir to mix well. Add in olives, capers and red pepper and toss to combine.
In a small bowl, whisk the lemon juice and olive oil until smooth. Pour over the salad, toss and serve.
