3 Tbsp. flax meal
1 Tbsp. warm water
2 cups vegan fish filet, flaked
1 cup golden potatoes (diced, boiled, cooled)*
1 cup sweet potatoes (diced, boiled, cooled)*
1 cup kale, shredded
1 red bell pepper, diced
1 tablespoon red onion, minced
Salt and pepper, taste
3 Tbsp coconut oil
Method:
1) In a bowl, combine the flax meal and water. Stir well. Let sit 5-10 minutes until the water becomes slimy.
2) In a separate bowl combine fish, potatoes, kale, bell pepper, salt, and pepper.
3) Add the flax mixture. Mix well.
4) In a large skillet, melt the coconut oil over medium high heat.
5) Add the entire mixture to the skillet, stirring frequently until cooked through.
* NOTE: Cook your potatoes until al dente, or just tender. Drain potatoes and cool immediately under cold running water.
