Ingredients:
3 medium beets, steamed and diced
1/2 bag baby spinach leaves
1 red onion, sliced
1/2 cup walnuts, halved and toasted
for the dressing:
1 garlic clove, crushed
2 tbsp lemon juice
3 tbsp olive oil
4-5 fresh mint leaves, chopped
½ tsp salt
Directions:
Place the beats in a steam basket set over a pot of boiling water. Steam for about 12-15 minutes, or until tender. Leave to cool for 5-6 minutes, then peel and dice the beets. Place the spinach leaves in a large salad bowl. Add in the beets, onion and walnuts.
In a smaller bowl, combine the oil, lemon juice, garlic and mint. Whisk and drizzle over the salad.
