Another dish made just for those cold winter days, it’s been called ‘liquid sunshine’ and will really help you thaw from the inside out. It is creamy, hearty and exactly what you want to comfort you as you strive to survive what is left of the cold season. Perfect as a soup but can be served over brown rice or quinoa as desired.
Ingredients
1/2 c unsweetened coconut flakes
1 ½ c coconut water
1 c coconut milk
1 carrot, grated
1 tsp fresh ginger, grated
1 clove garlic, crushed and minced
2 green onions, chopped
2 young zucchini (~8 inch long, 2 inch diameter), grated
1 red bell pepper, seeded and chopped
1 tsp curry powder
pinch of sea salt to taste
cayenne pepper to taste
cilantro for garnish (opt)
Instructions
In a saucepan, heat 1 c coconut water to a simmer.
Add grated coconut flakes and allow to simmer for 5 minutes.
In your blender, combine carrot, ginger, garlic, onions, zucchini, and bell pepper. Pulse to break up larger pieces before pureeing until a rough paste forms. Add a little water to allow it to mix easily
