This dish is simple and absolutely delicious, especially on those cold, wet days. The key to this dish is your choice of curry paste. Find a really good one and stick with it. The best curry pastes blend lemongrass, turmeric and a variety of herbs and other spices for the perfect flavor combination.
Ingredients
2/3 c (6 oz) Malaysian Curry Paste
1 medium yellow onion, thinly sliced
2 c sweet potatoes, peeled and cubed (~1 inch pieces)
1 can (14 oz) coconut milk
2 c cauliflower, cut into florets (bite-sized for larger florets)
1 c fresh green beans, trimmed and cut into 2 inch pieces
1 tbsp olive oil
1/3 c water
Instructions
Heat oil in a wok or large skillet over medium-high heat. When oil is hot, add onion and cook for about 2 minutes, stirring constantly.
Add curry paste and continue cooking and stirring for another minute or so until onions are softened and mixture becomes fragrant.
Add sweet potato and coconut milk. Bring to a boil. Reduce heat to low. Cover and simmer for 5 minutes until slightly thickened.
Add cauliflower and water. Cover again and allow to cook for 12 minutes or until vegetables are fork-tender, stirring occasionally.
Add green beans. Cook for 4 minutes.
Serve alone or over brown rice and enjoy!
