Ingredients:
Chickpea Salad:
chickpeas 1 can, rinsed and drained
mayonnaise ⅓ cup 1 tsp.
curry powder (to taste)
scallions 2, thinly sliced
toasted almond ¼ cup sliced
peach chutney
peaches 8 oz. can sliced in natural juices, drained but not rinsed
red pepper ¼ cup diced
onion ¼ cup diced
raisins ⅛ cup
cinnamon ½ tsp. ground
cloves ⅛ teaspoon ground
ginger ¼ teaspoon ground
cider vinegar ⅛ cup
sugar ⅛ cup
water ¾ cup
Directions:
Make the chutney:
In a medium saucepan, combine the ingredients for chutney together over medium heat, bring the mixture to a boil and lower heat to low flame or electric setting to cook for 20 minutes, until liquid is minimzed by ⅔. Allow the mixture to cool to room temperature.
Toast bread while you make chickpea salad
Preparing the Salad:
In a mixing bowl add chickpeas and smash, leave some chunky pieces for consistency. Then add the rest of ingredients other than the chutney and combine. Taste to check amount of seasonings if more is needed add them and taste again.
Once the combined fruit mixture has cooled, add ½ to the salad and toss to combine. Taste! Add more fruit mixture if desired
