Ingredients (2 Servings)

1 14-ounce package firm tofu
●
Kosher salt
●
8 cups spinach leaves
●
1 tablespoon sesame seeds
●
1 1/2 teaspoons sugar
●
1 teaspoon mirin
●
1 teaspoon soy sauce
Directions
Blend tofu in a food processor. Keep it in a bowl on the side.
Boil salted water in large pot. Take another large bowl and fill it with ice water. Add spinach to the boiled water and cook until it is wilted. Then remove water and transfer the spinach to ice cold water.
Now in a skillet, add oil and toss the sesame seed, until it becomes golden brown. Allow it to cool down and blend. Add ground seeds, sugar, mirin, soy sauce and spinach to the tofu. Add salt. Serve.
