Ingredients
1 cup whole-wheat pastry flour
1 cup all-purpose flour
1 tablespoon baking powder
2 teaspoons grated orange peel
1/2 teaspoon ground nutmeg or mace
1/4 teaspoon salt
2/3 cup soymilk
1/2 cup brown rice malt syrup (or pure maple syrup)
1/4 cup vegetable oil
1 teaspoon vanilla extract
1 cup fresh raspberries
Directions
1. Pre-heat the oven up to 350 degrees F and lightly grease 8 to 10 muffin cups or line with paper liners.
2. In large bowl, stir together the whole-wheat pastry flour, all-purpose flour, baking powder, orange peel, ground nutmeg and salt.
3. Then, in a medium bowl, whisk the soymilk, syrup, vegetable oil and vanilla altogether until combined.
4. Add the soymilk mixture into the flour mixture and stir well until smooth.
5. Next, gently fold in the raspberries and reserve a few berries to sprinkle on the top.
