¼ cup texturized soy protein
½ cup dried lentils
1 small onion, diced
1 cup chopped zucchini
1 large potato, diced
1 ½ medium-sized carrots, diced
½ cups green bean, chopped
½ fresh tomato, finely chopped
2 dried basil leaves
1-2 cloves of garlic
2 beef bouillon cubes
¼ cup tomato sauce or extract
6 cups water
½ teaspoon salt
¼ tsp black pepper
Directions
Add soy protein, lentils, onion, zucchini, potato, carrots, green beans, tomatoes, basil leaves, garlic cloves, beef bouillon cubes, and tomato extract in the crock pot. Mix well and then add water.
Sprinkle with salt and pepper. Cover the crockpot, and let it cook for 6 - 8 hours on low setting or until vegetable tender.
