Ingredients:
- 3 tablespoons olive oil
- 1 teaspoon fennel seeds
- 1 teaspoon salt
1 tablespoon lemon juice, freshly squeezed
- 1 teaspoon mild chile powder
- 2 lbs fish fillets, skinless, cut into chunks
- 4 stalks celery. Diced
- 2 onions, finely chopped
- 4 cloves garlic, minced
- 1 teaspoon dried oregano
- 2 bay leaves
- ½ teaspoon black peppercorns
- 1 can tomatoes with juice, chopped
- 2 lbs fish trimmings
- 6 cups water
- ½ cup parsley leaves, finely chopped
Directions:
Combine 2 tablespoons olive oil, fennel seeds, salt, lemon juice, and chile powder in a bowl. Mix well. Add the fish fillets and toss until well coated. Cover and refrigerate for 1 hour.
