Ingredients:
• 2 tablespoons olive oil
• 1 small yellow onion, sliced thinly
• 2 large garlic cloves, sliced thinly
• 1 inch of ginger, peeled and sliced thinly
• 2 tablespoons water
• 1 tablespoon soy sauce
• 1 large butternut squash, cubed
• 1/3 cup maple syrup
• 2 tablespoons light brown sugar
• Salt and black pepper to taste
Preparation:
Add oil to bottom of slow cooker pot. Add onions, garlic and ginger. In a cup combine water and tamari. Add water mixture to slow cooker.
Add cubed squash, maple syrup, brown sugar, and salt and pepper to slow cooker.
Place lid on slow cooker and cook for 6 hours on low setting.
Mix gently and serve warm.
