1/2 cup cheddar cheese, shredded
1/4 cup chives, chopped
4 eggs
4 strips bacon, cooked and crumbled
Pepper and salt to taste
For the potatoes:
4 russet potatoes, scrubbed, pricked all over
1 teaspoon oil
Salt to taste
1. For the potatoes: Rub them with oil, pepper, and salt. Wrap them with foil. Put in the crockpot. Cover; cook on LOW for 7-10 hours. When ready to serve, cook the bacon until crisp. Fry the eggs as desired. Transfer the cooked potatoes on a clean cutting board. Cut them open. Sprinkle with cheese. Top with 1 bacon 1 egg, 1/4 avocado slices, chives, and season with pepper and salt each.
Grease the crockpot using cooking spray. Put quartered 1 roll cinnamon roll on the bottom of the pot; save the frosting packets. Beat the eggs in a small bowl. Add the nutmeg, cinnamon, vanilla extract, maple syrup, and cream. Whisk until well blended. Evenly spread the egg mixture on top of the cinnamon rolls in the pot. Spread the remaining quartered 1 roll cinnamon roll on top. Cover; cook for 2 1/2 hours on LOW or till the sides are golden brown and the rolls are set. Spread the frosting over the warm casserole. Serve warm.
