about 2 lb chicken breasts
3-4 carrots, chopped
2 celery ribs, trimmed, halved, thinly sliced
1 red onion, chopped
1/3 cup rice
6 cups water
10 black olives, pitted and halved
1 bay leave
1/2 tsp salt
ground black pepper, to taste
lemon juice, to serve
fresh parsley or coriander, to serve
Directions:
Add all ingredients to the slow cooker and stir to combine. Cook on low for 6 to 8 hours, or until chicken is cooked and carrots and rice are tender.
Remove chicken from the slow cooker and let it cool slightly. Shred it and return it back to the soup. Serve soup with lemon juice and sprinkled with fresh parsley or coriander.
