1 cup pumpkin, solid packed
1/2 cup coconut or light brown sugar
2 Tbsp coconut oil
1/4 cup maple syrup
1 tsp pure vanilla extract
2 tsp baking powder
1 3/4 cups all purpose flour, unbleached
1/2 tsp ground cinnamon
1/2 tsp ground allspice
1/2 tsp ground nutmeg
1/2 tsp salt
1/2 cup chocolate chips, semi sweet
Nonstick cooking spray
How to Prepare:
1. Grease the Crock Pot with nonstick cooking spray.
2. Mix together the pumpkin, maple syrup, sugar, vanilla extract, and coconut oil in a bowl.
3. In another bowl, mix together the salt, baking powder, flour, nutmeg, allspice, and cinnamon. Pour the flour mixture gradually into the pumpkin mixture as you stir; do not over-mix.
4. Fold the chocolate chips into the batter until evenly distributed, then pour into the Crock Pot.
5. Place a clean towel over the Crock Pot to cover, then place the lid on top. Cook for 2 hours on high or for 5 hours on low, or until bread becomes firm. Turn off the heat and let it stand for 10 minutes before you slice
