This French cuisine gives a hearty country-style flavor to the chicken dish. This can be best served with green salad on a chilly day.
Ingredients:
- 2 oz chunk chicken breast, cut into cubes
- 2 onions, finely chopped
- 4 cloves garlic, minced
- 2 bay leaf
- 1 teaspoon black peppercorns
- ½ teaspoon salt
- 2 teaspoons dried Italian Seasoning
- 1 can tomatoes with juice
- 3 lbs bone-in chicken thighs, skinless
- ½ cup pitted green olives
- ½ cup pitted black olives
- Parsley leaves, finely chopped
Directions:
In a skillet, cook the chicken breast until brown. Set aside and put on paper towels.
Reduce heat to medium and stir in the onions. Cook for 3 minutes or until translucent. Add the garlic, bay leaf, peppercorns, salt, and Italian seasoning. Stir for 1 minutes. Bring to a boil for 2 minutes. Add the tomatoes with juice and bring to a boil.
