4 1/2-ounce canned chopped green chilies, drained
3/4 cup shredded sharp cheddar cheese
2 tablespoons fresh leaves cilantro, chopped, optional
16-ounce packaged frozen tater tots
15-ounce canned black beans, drained, rinsed
10-ounce canned mild enchilada sauce
1 tablespoon taco seasoning mix
1 tablespoon olive oil
1 onion, diced
1 cup corn (roasted or canned) frozen kernels,
1 cup (store-bought or homemade) salsa
1 1/2 pounds ground beef
1. Put the olive oil in a large-sized skillet; heat on medium-high flame/heat. Add the beef and onion. Cook for about 3 to 5 minutes or until brown, crumbling the beef in the process. Drain the excess fat. Remove the pan from heat. Add the enchilada sauce, taco seasoning, green chilies, salsa, corn, and black beans.
2. Lightly grease a 4-quart crockpot using cooking spray. Distribute 1/2 of the tater tots on the bottom of the pot. Spread the beef mixture on top. Cover the meat with the remaining tater tots. Cover; cook for 3-4 hours of LOW. Add the cheese during the last 30 minutes of cooking time. Garnish with cilantro if desired. Serve immediately.
