Ingredients:
5 potatoes
¼ cup curry powder
2 tablespoons flour
1 tablespoon chili powder
½ teaspoon red pepper flakes
½ teaspoon cayenne pepper
1 large green bell pepper
1 large red bell pepper
1 (1 ounce) package dry onion soup mix
1 (14 ounce) can coconut cream
Water, as needed
2 carrots
1 cup green peas
¼ cup chopped fresh cilantro
Procedure:
Slice green and red bell pepper into strips. Peel carrots and cut into matchsticks.
Peel potatoes, cut into 1 inch cubes and place in the crockpot. In a small bowl, place curry powder, flour, chili powder, red pepper flakes and cayenne pepper, mix, add to the pot and stir to coat potato pieces evenly with the spices. Now add sliced red and green bell pepper, onion soup mix and coconut cream, mix well to combine.
Cover cooker with the lid and cook on low heat setting for 3 hours until bubbly and ingredients are blended and soft. Add sliced carrots to the pot and cook for half an hour. Add peas, stir and for another half an hour until vegetables are tender. Serve with chopped cilantro.
