Ingredients

2 pounds pork tenderloin, cut into 2-inch chunks
3 medium carrots, sliced
1 large onion, chopped
3 garlic cloves, chopped
3 cups chicken or beef stock
2 tablespoons tomato paste
1 rosemary sprig
1 thyme sprig
Salt and black pepper, to taste
Freshly chopped parsley for garnish

Directions

Cut pork and rub with salt and pepper. Transfer meat chunks to a slow cooker.

Add carrots, onions, garlic. Whisk stock and tomato paste and pour in the slow cooker pot. 
Top with rosemary and thyme, cover and cook on low for 4-5 hours until meat is tender.
Discard thyme and rosemary, serve and sprinkle with freshly chopped parsley.
