Ingredients:
4 skinless, boneless chicken thighs, cut into bite-sized pieces
1 large onion, chopped
1 zucchini, quartered lengthwise and sliced into 1/2-inch pieces
3 cups peeled butternut squash, cut in 1/2-inch pieces
2 tbsp tomato paste diluted in 5 cups chicken broth
1/2 tsp ground cumin
1/4 tsp ground cinnamon
1 tsp paprika
1 tsp salt
4-5 basil leaves, chopped
1 tsp grated orange rind
Directions:
Place the chicken, vegetables and spices in the slow cooker. Pour the chicken broth over and stir to combine.
Cover and cook on low for 8-9 hours or until the chicken is cooked through and the squash is tender.
