Thai Coconut Soup

 

Ingredients:

1 cup sliced mushrooms
2 tablespoon lime juice
1 tablespoon fish sauce14 ounces full-fat coconut milk
2 cups chicken stock
1pound shrimp or chicken breast
1 inch piece of ginger, peeled and sliced into 1/8 inch rounds
1 teaspoon sriracha
Chopped cilantro for garnish

Instructions:

Peel and devein shrimp, if necessary, or if using chicken, remove connective tissues and cut into small pieces. 

Peel in slice ginger into 1/8-inch rounds. Slice mushrooms. 
Add coconut milk, chicken stock and ginger to a pot and bring to boil over medium heat. 
Reduce heat to simmer and add shrimp/chicken, mushrooms, lime juice, fish sauce and sriracha to the pot. 
Cook for less than 5 minutes, if using shrimp, and 5 to 10, if using chicken, or until cooked. 
Meanwhile, chop cilantro. Remove ginger from the soup (optional).
Serve garnished with cilantro.
