Ingredients:
3 cloves garlic, minced
1 (6 oz.) can tomato paste
¼ cup water
1 tbsp. Italian seasoning
Salt and pepper to taste
8 small bell peppers, any color
½ head cauliflower
½ lb. grass-fed ground beef
½ lb. lean ground turkey
1 onion, diced
Instructions:
1. Cut the cauliflower into florets and pulse it in a food processor
along with the onions and garlic.
2. Slice the tops off the peppers and remove the seeds, preserving the top of the pepper.
3. Combine the pulsed vegetables with the ground meat, tomato paste, Italian seasoning, salt and pepper in a medium bowl.
4. Stuff the meat mixture into the peppers and replace the tops.
5. Arrange the stuffed peppers in the slow cooker and pour the water into the slow cooker around them.
6. Cover and cook on LOW heat for 6 to 8 hours.
