Heat a nonstick pan over medium high heat. Stir together the coconut flour and eggs to make a smooth paste. Add the oil, coconut milk and stevia. Stir them all together until smooth.
Just before cooking, stir in the baking soda and vinegar.
Add about a tablespoon of oil into the hot pan. Cook the pancakes in the skillet. For best results, make pancakes small. Top with organic maple syrup (or topping of your choice).
Serve and enjoy!
Preheat oven to 400 degrees Fahrenheit.
In a large bowl combine almond meal, coconut flour, baking soda, baking powder, cinnamon and sea salt.
In a separate bowl combine bananas, almond milk, honey, eggs and vanilla extract.
Slowly add wet ingredients to dry and stir until just combined. Stir in nuts.
Line a muffin tray with muffin liners or grease well and fill each cup 3/4 full.
Bake for 20 minutes.
Remove from oven and allow to cool for 20 minutes.
Serve and enjoy!
