Preheat the oven to 350 degrees F.
Line a baking pan with parchment paper ensuring you drape the paper well over the sides.
In a large bowl, whisk together herb mix, flaxseed and baking powder and then set aside. In a blender, blend eggs, oil and water for 30 seconds or until foamy.
Add the wet ingredients to the dry ingredients and mix until fluffy. Let the mixture sit for 3 minutes and then pour it into your baking pan. Bake for 20 minutes and once time is up, remove parchment paper and let the bread cool for at least 1 hour.
Slice the bread and enjoy with a cup of tea or coffee. You can also toast the bread, refrigerate for 3-4 days, or place in freezer for up to 3 months.
