Ingredients:
4 bone-in pork chops
¼ cup yellow onion, diced
¼ cup red bell pepper, diced
½ cup fresh corn kernels
½ cup poblano pepper, diced
4 cups asparagus spears, cut into 1-inch pieces
1 cup chicken or vegetable stock
1 teaspoon cumin
1 teaspoon garlic powder
1 teaspoon salt
1 teaspoon black pepper
Directions:
Set up and prepare your slow cooker.
In a bowl, combine the onion, red bell pepper, corn, and poblano peppers. Mix well and spoon the mixture into the center of each pork chop.
Season the pork chops with cumin, garlic powder, salt, and pepper before adding to the slow cooker.
Cover and cook for 8 hours on LOW.
About half an hour before you are ready to eat, add the asparagus. Serve when the asparagus is tender and the meat is cooked through.
