1 tbsp extra virgin olive oil
1 tbsp butter
1½ pounds zucchini, cut right into julienne strips
1 big clove garlic, minced
1 tbsp chopped fresh parsley
½ tsp coarse salt
½ tsp freshly ground pepper
1 tbsp fresh lemon juice
Heat the olive oil & butter in a big skillet over medium-high heat till the butter melts. Add the zucchini & sauté for 5 to 10 min. Or till only beginning to brown, stirring frequently. Add the garlic, parsley, salt, & pepper & blend well. Cook for 1 to 2 min. Or till the garlic becomes fragrant. Squeeze the lemon juice over the zucchini, if desired. Serve traight away .
