¼ cup lemon juice
- 1 ½ cups orange juice
- 2 cinnamon sticks
- ½ cup basil leaves
- 1/8 teaspoon cayenne
- 3 lbs chicken wings
Directions:
Grate zest from the orange. Set aside. Crush garlic cloves and put salt. Mash until it forms a paste.
In a bowl, combine lemon juice, orange juice, cinnamon, basil, cayenne, and garlic paste. Mix well. Place in a zip lock bag and add the chicken. Shake until chicken wings are well coated.
Spray grill rack with nonstick cooking spray and place the marinade chicken wings. Grill for 20 minutes.
For the gremolata, chip remaining basil leaves and garlic cloves. Add the grated orange zest. Transfer chicken in a big platter and sprinkle with gremolata.
